Rich in vitamins A, C, magnesium, calcium, manganese, potassium and iron, as well as flavouring dishes, bay leaves have invaluable health benefits. They help combat high blood pressure, premenstrual symptoms and, in particular, type 2 diabetes.  In fact, bay leaves can improve insulin sensitivity and are very useful for regulating blood sugar levels.

Recipe : Bring 1 litre of water to the boil. When the water boils, add 10 bay leaves. Leave to infuse for 5 minutes. Turn off the heat and leave to stand for ten minutes. Filter the infusion before drinking, no more than four cups a day.

Caution : Excessive consumption of bay leaves may cause drowsiness or harm people with sensitive stomachs. Pregnant women, people suffering from type 1 diabetes, bleeding disorders, kidney, heart or liver disease or gastrointestinal ulcers should not use this drink.
