Eggplant,
called « Agbissan » in Ewe, is a vegetable that is very beneficial to
the body. It contains nutrients such as calcium, phosphorus and iron. According to Mathieu Tobossi, Specialist in
Food Hygiene and Quality and Dietetic Therapist, eggplant is a beneficial
vegetable for diabetics.
A
vegetable rich in water (about 90 and its composition), the eggplant « Solanum
aethiopicum » is a low-calorie food, which becomes an excellent
alternative for those who follow a restrictive diet. It helps control diabetes
because of its high fiber and low carbohydrate content. If one is careful with
blood sugar, consume eggplant, because it has the ability to reduce the
absorption of glucose in the body. So it is an interesting vegetable for people
with diabetes.
« It
is a vegetable that protects the pancreatic cells and improves their lipid and
glycemic profile, that is to say, it avoids the overload of the pancreas in bad
fats and strengthens its anti-diabetic activity »,
emphasizes Mathieu Tobossi, Specialist in Food Hygiene and Quality and Dietary
Therapist.
Known
to absorb fats thanks to its antioxidants, it helps to fight against the lack
of firmness of the skin. Eggplant is rich in fiber and allows a satiating
effect by impression of volume, with a limited additional energy intake. It can
thus contribute to the regulation of the weight. For people who want to lose a
few kilos, it is the vegetable to keep close by.
Moreover,
it also contributes to a good digestion. We sometimes consume foods that are
not easily digestible for the body. By consuming eggplant, it facilitates the
digestion of food and ensures the regular passage of food in our body by
facilitating the transit. Composed of natural antioxidants such as vitamins C
and E, selenium or carotenoids, the skin of the African eggplant would
contribute to fight against the development of various cancers and certain
cardiovascular diseases.
