you can't save those overly salty dishes. There are some tips for rebalancing
these dishes.
Using
potatoes for overly salty sauces
If
you have cooked a sauce that is too salty, it is advisable to wash and peel one
or more raw potatoes and cut them into slices. Then place them in the bottom of
the pot. During the cooking process, the potatoes absorb the excess salt. Do
not forget to remove them before serving. However, there are other ingredients
such as honey that can also help to absorb the excess salt.
Water
and vegetables
One
of the most common tricks is to use water to reduce excess salt in a sauce. If
a soup is too salty, water can be added and left to simmer for a few minutes on
a medium heat. However, care should be taken not to add too much water as this
can change the thickness of the soup. Vegetables can balance the taste of a too
salty simmered dish, as can parsley, spinach, and other green vegetables.
Acidity
to reduce excess salt
Another
trick to make up for an overly salty dish is simply to add acidity. This method
does not really remove the excess salt, but the acidic ingredient helps to
balance the dish. So don't hesitate to add vinegar or lemon juice to save the
sauce. If you choose vinegar, you should choose a white vinegar which will
alter the taste of the dish less.
Caution:
Some food products have a high salt content, such as ham, cheese, shrimp and
seafood, and foie gras. If you want to add them to your dishes, you should
avoid adding salt. On the other hand, garlic and black pepper are excellent
spices for replacing salt in dishes.
